Not all smoking is bad for you. In fact, adding wood smoke to your backyard grill just might make you feel like you're in heaven.
Barbecue guru Steven Raichlen has a new book out on the joys of using hickory, apple, cherry and other wood to make your meals even tastier.
"Project Smoke," is the latest offering from Raichlen, who has written many best-sellers, including "The Barbecue Bible," "Planet Barbecue," and "BBQ USA."
Raichlen recently spoke with CBN News about how to turn an ordinary grill into a smoker and showed off several smoke-tasty meals.
The centerpiece -- Monster Beef Ribs -- each weighing about two pounds and capable of feeding 2-3 people filled the table. For desert: a Bacon Bourbon Apple Crisp smoked with hickory wood and ice-cream infused with flavor from a hand-held smoker.
For those just starting out, Raichlen recommends smoking a Carolina-style pork shoulder using the recipe in his book.
Pork shoulder is almost impossible to ruin because, it's an "intrinsically tender cut of meet, incredibly, generously marbled with fat, so if you overcook it, if you get a temperature spike, it will still come out crusty and lucious," he said.
