Turkey Pot Pies- Nancy Hogland from Lake Ozark, Missouri

Ingredients:
2 pre-made pie shells from dairy department (or make your own)
2-3 carrots, peeled and diced
2-3 stalks celery, diced
1 small onion, diced
2 large or 3 small potatoes peeled and diced
2 cans chicken broth
2 chicken boullion cubes
2-3 cups chopped turkey
Pepper to taste

Cooking Instructions:
Cook vegetables in broth with added boullion and pepper to taste until just tender. Add turkey and bring to boil. Turn heat off and let cool slightly. Place pie shell in bottom of 9-inch deep dish pie pan. Carefully pour turkey/vegetable/broth mixture into crust. Place top pie crust on, seal edges and cut slits for steam to escape. Bake at 350 degrees until brown - about 40 minutes. Let sit for 10 to 15 minutes before serving. Great with warm bread and salad.

Memorable Moment:
I had made this for my husband and myself a couple days after after Thanksgiving. My granddaughter, Coralie , happened to stop by after dinner that night and asked if she could try a bite. She loved it so much, she came over the following week so I could teach her how to make it for her family. We had so much fun - and she kept saying, "Oh grandma, you're the best cook in the world!" That made it taste even better for me!
