Date-Nut Pinwheel Cookies - Maureen from Pennsylvania

Ingredients:
FILLING
1 lb dates, chopped
1/2 cup sugar
1/2 cup water
1/2 cup chopped walnuts
DOUGH
1/2 cup butter or margarine
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1/2 tsp vanilla
2 cups flour
1/2 tsp baking soda
1/2 tsp salt

Cooking Instructions:
FILLING
In saucepan, combine the dates, sugar and water. Stir and heat to boiling. Set aside to cool. Just before using, add the 1/2 cup walnuts.
DOUGH
Blend butter, sugars, egg and vanilla till creamy. Mix dry ingredients, add slowly to mixture to form dough. Divide dough in half, roll each half out on waxed paper to a rectangle about 12 x 8. Spread with date nut mixture and roll up using the wax paper. Wrap the rolls and refrigerate them overnight or for several hours.
Preheat oven to 400 degrees, spray cookie sheets with cooking spray or grease them. Slice the rolls into 1/2 inch thick rounds, bake for 8 minutes

Memorable Moment:
These were from my Grandmother's recipe and were my father's favorite cookies. It just wasn't Christmas until we had made a big batch of these delicious cookies. They are so good you can give them as gifts.
