Easy Christmas Truffles - Val from Oregon


Ingredients:
1/3 cup margerine
1/3 cup corn syrup
1/2 bottle flavoring (mint, root beer, banana, cherry, or lemon extract)
1 bag of powdered sugar

Cooking Instructions:

Slowly add powdered sugar with mixer on low speed until it starts to get thick like frosting. Remove the beaters and then knead dough with your hands with remaining powdered sugar. Form the dough into 1-inch balls and refridgerate for 1 hour in a large bowl.

In the meantime, place a large piece of wax paper on a cookie sheet. In a double boiler. Melt 3 bags of chocolate chips or white chocolate chips (*see HINT below*). Remove the 'balls' from refridgerator. Dip one by one into the chocolate mixture using 2 spoons and place them about 1/2 inch apart on the wax paper.

Refridgerate for about 15 minutes. Then, they will be set and ready to eat.

Note: If you want the flavor to be stronger, add a little more of the extract.

*HINTS*

  • For root beer and banana flavored truffles, I use white chocolate chips for the coating.
  • For *PEANUT BUTTER TRUFFLES* - During the very first step, decrease margerine to 1/4 cup and add 2 cups of peanut butter. Mix well at low speed and add corn syrup and then the powdered sugar. Cover them with milk chocolate.
